The Bikini Cocktail

Yields 10 guests

Ingredients for the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

Making the Syrup: Place all the ingredients into a saucepan, bring to a simmer, stirring so the sugar melts. Next, take off the burner and leave to cool down fully. Decant into a sterilised bottle, close it keeping it in the refrigerator, where it will keep for about a month.

For the Premix: Mix every spirits and syrup into a big jug, leave to sit for an hour, then filter it preferably using a fine cloth, so it's perfectly clear.

For serving: Measure 85ml of the premix into your stirring glass filled with ice, gently stirring lightly for about 60 seconds until cold. Pour into a frosted cocktail glass or similar, top with a few cranberries and finish by giving it a light spray with the mandarin essence over the drink.
